What a great time to celebrate with friends and family over some homebrew!
In our lineup, we have three "house" recipe beers on tap that don't change often, then rotate a 4th for that creative or seasonal beer.
It's fun and challenging to dial in these house beers and we are always tweaking them slightly. To help accommodate recipe changes, we decided to set up the hop timings so that different hops can be easily substituted, even though their alpha acid levels are not the same. The timings for our house IPA, Amber, and Pale Ale recipes all begin at 60 and work their way down in 10 minute increments. While these additions mean more work on brew day (compared to typical initial and knockout additions), they let us get closer to the bitterness ratio that we want to achieve for each style, and we can scale the amount of each addition accordingly.
Today I thought I'd share our house Amber ale recipe and so far, nugget hops have been my favorite. This recipe is for 10 gallons but it should scale nicely to 5 gallons.
Cheers!
